I just wanted to share this picture with you. I smoked the deckel cut with some Montreal steak spice on my smoker, then finished in a low oven 250 degrees, refrigerated overnight and sliced. You can see how little fat there is. I think it came out beautifully. I'm really happy with the quality of the beef. Thank you.

All the meat has been excellent but the hot dogs are so different from what I'm used - in a good way. They actually taste meatier.
