Veal Shoulder Roll is affordable yet an excellent roast. There are many ways to make this roast, most recipes call for a slow oven or pot roast with broth and vegetables. It also works well on a bed of onions or with shallots, fennel and white wine. This is a fairly large roast, but it can be reheated for a second or third meal.
As with all our roasts, it can be sliced very thin when cold and is great in sandwiches.
